- 500g fresh spinach (or 300g frozen)
- 2 garlic cloves, minced
- 1 tbsp butter
- 100ml double cream
- 20g grated Parmesan

Method:
Wilt spinach in a pan, then squeeze out excess moisture and set aside. In the same pan, melt butter and gently cook garlic until soft. Stir in cream and Parmesan, season, then return the spinach. Simmer gently until thick and velvety. Finish with a pinch of nutmeg.

- 30g shaved Parmesan

Method:
